Black Currant Popsicles (Printer view)

Tangy, sweet frozen treats made with fresh blackcurrant juice. Perfect for cooling down on hot days.

# What You'll Need:

→ Fruit Base

01 - 2 cups blackcurrant juice, unsweetened
02 - 1/2 cup granulated sugar
03 - 2 tablespoons fresh lemon juice

→ Optional

04 - 1/4 cup whole blackcurrants, fresh or frozen

# Directions:

01 - Combine blackcurrant juice and sugar in a small saucepan. Warm gently over medium heat, stirring constantly until sugar completely dissolves, approximately 3-5 minutes. Do not allow mixture to boil.
02 - Remove saucepan from heat and stir in fresh lemon juice. Allow the mixture to cool to room temperature before proceeding.
03 - If using whole blackcurrants, divide evenly among popsicle molds to distribute texture throughout the frozen popsicles.
04 - Pour cooled blackcurrant mixture into popsicle molds, leaving approximately 1/4 inch of space at the top to allow for expansion during freezing.
05 - Insert popsicle sticks into each mold and transfer to freezer. Freeze for at least 4 hours or until completely set and solid.
06 - Run the outside of molds briefly under warm water to loosen popsicles. Gently pull out popsicles and serve immediately or store in freezer.

# Expert Suggestions:

01 -
  • These taste like summer distilled into a popsicle, with zero pretension and maximum refreshment.
  • You actually know what's going into them, which beats any neon-colored store version by miles.
  • Making them feels like a tiny kitchen magic trick that takes almost no effort but impresses everyone.
02 -
  • Don't skip cooling the mixture to room temperature—hot liquid will crack frozen molds and melt everything around it, which I learned the hard and messy way.
  • The whole blackcurrants sink to the bottom if you don't nestle them in first, so that little extra step actually matters for the final look and texture.
03 -
  • Buy your blackcurrant juice from a health food store or international market if you can—the quality and intensity are noticeably better than what you'll find in regular supermarkets.
  • If your molds are sticking like crazy when you try to unmold, soak them in warm water for 30 seconds instead of running them under, which gives the ice more time to soften at the edges without the popsicle sweating everywhere.
